Hi,everyone! Today I am sharing with you my super healthy lunch! It is a dish that combines many flavors and is literally packed with nutrients! Black lima beans with pasta, tomato and iceberg topped with a mouthwatering avocado cream. I made it after a 22km long run and felt that my body was grateful for that. It made my recovery easier!
Don’t forget to use different kind of foods, so that you get all the nutrients you need. Of course you can make your own version of my meal, for example you could use chickpeas instead of lima beans or spinach instead of iceberg. Just improvise! The equation is legumes+pasta or rice+veggies= pure bliss! Of course the ingredients you use are important, so make sure to cook with high quality stuff! 1 cup black lima beans, cooked
3/4 cup «Andritsena» small pasta shells
1 tomato + 1/2 yellow pepper, finely chopped
1 cup green salad (I used iceberg)+fresh mint, finely chopped
«My olive oil» extra virgin olive oil
1 tsp «Cretan herbs» organic blend for salads
«Vaimakis» jasmin elixir (vinegar)
«Threpsi» sea salt in flakes
for the avocado cream:
1 ripe avocado
1 garlic clove
1 Tbsp «My olive oil» extra virgin olive oil
juice and zest of 1/2 lemon
1 tsp maple syrup
salt and pepper
«Douroudous bakery» organic oat kafkalo (rusks)
Cook pasta according to package instructions. Process all the cream ingredients until smooth. In a bowl mix beans with olive oil, peppers, garlic and mint. In a platter place beans, tomato, pasta, iceberg. Sprinkle with the blend. Top with avocado cream. Enjoy!
